Belgian Rice Balls


  • 2 cups of cooked rice
  • 1/2 cup of currants
  • 1/2 cup of sugar
  • 1 well beaten egg
  • 1 teaspoon of vanilla


Place rice in a bowl and add currants, sugar, egg, and vanilla. Mix and then form into small balls, about the size of an orange. Dip into beaten egg and then roll in fine bread crumbs. Fry until golden brown in hot fat. Serve with crushed and sweetened fruit.
