Baked Green Peppers


  • 6 large peppers
  • 4 onions
  • 2 ounces of bacon, diced and cooked to a light brown
  • 1 1/2 cups of fine bread crumbs
  • 2 teaspoons of salt
  • 1 teaspoon paprika
  • 1/2 teaspoon thyme
  • 3/4 cup of milk
  • 1 well-beaten egg


Cut a slice from the top of the peppers and remove the seeds and then place in cold water until needed.

Now mince onions fine and then cook until tender but not brown, in four tablespoons of shortening. Place in a bowl and then add bacon, bread crumbs, salt, paprika, thyme, milk, and egg. Mix and then fill into the peppers.

Place in a greased baking pan and add one-half cup of water. Bake for forty minutes in a moderate oven. Five minutes before removing from the oven place a strip of bacon over each pepper. When nicely browned, serve.
