Rice and Meat Croquettes


  • 1 cupful of boiled rice
  • 1 cupful of finely-chopped cooked meat, any kind
  • 1 teaspoonful of salt
  • a little pepper
  • 2 tablespoonfuls of butter
  • 1/2 cupful of milk
  • 1 egg


Put the milk on to boil, and add the meat, rice and seasoning. When this boils, add the egg, well beaten; stir one minute. After cooling, shape, dip in egg and crumbs, and fry.
