Potato Croquettes

Ingredients

  • 6 good-sized potatoes
  • 1 tablespoonful of butter
  • 2/3 of a cupful of hot cream or milk
  • whites of 2 eggs, well beaten
  • salt
  • pepper

Instructions

Pare, boil and mash the potatoes. Add butter, hot cream or milk, the egg whites, and salt and pepper to taste. If you wish, use also a slight grating of nutmeg, or a teaspoonful of lemon juice. Let the mixture cool slightly, then shape, roll in egg and crumbs, and fry.
