Pickled Cucumbers, No. 2

Ingredients

  • 600 small cucumbers
  • 2 quarts of peppers
  • 1 1/2 cupfuls of salt
  • 1 piece of alum as large as an egg
  • 3 gallons of cider vinegar
  • 3 pints of water
  • 1/4 pound of whole cloves
  • 1/4 pound of whole allspice
  • 1/4 pound of stick cinnamon
  • 2 ounces of white mustard seed
  • cabbage leaves

Instructions

Wash and wipe the cucumbers and peppers. Put them in a tub with salt and alum. Heat to the boiling point cider vinegar and water. Add whole cloves, whole allspice and stick cinnamon, and white mustard seed, and pour over the pickles. Cover with cabbage leaves.
