Marinade for Fish


  • 1 quart of cider
  • 2 slices of carrot
  • 1 large onion
  • 4 cloves
  • 1 bouquet of sweet herbs
  • 2 tablespoonfuls of butter
  • 2 tablespoonfuls of salt
  • 1/2 teaspoonful of pepper
  • 1/2 teaspoonful of mustard


Cook the onion and carrot in the butter for ten minutes, and add the other ingredients. Cover the sauce-pan, and simmer one hour and a half. This is for stewing fish. It should be strained on the fish, and that should simmer forty minutes.
