Corn Cake, No. 2

Ingredients

  • 2 tea-cupfuls of corn meal
  • 1 tea-cupful of flour
  • 3 tea-cupfuls of sour milk
  • 2 eggs
  • 1 tablespoonful of sugar, or of molasses, if you prefer
  • 1 teaspoonful of soda
  • 1 teaspoonful of salt

Instructions

Mix together the sugar, salt, meal and flour.

Beat the eggs light.

Dissolve the soda in two tablespoonfuls of boiling water, and pour into the sour milk. Stir well, and add to the other mixed ingredients. Add the eggs, and mix thoroughly.

Pour into buttered tins to the depth of about an inch and a half. Bake twenty-five minutes in a quick oven.
