Apple Ginger

Ingredients

  • 4 pounds of apple
  • 4 pounds of sugar
  • 1 pint of water
  • 1 ounce of green ginger
  • grated rind of 4 lemons

Instructions

Make a syrup of the sugar, adding the water. Chop the apple very fine, with the green ginger; or, if you cannot get the green ginger, use white ginger root. Put in the syrup with the grated rind, and boil slowly for two hours, or until it looks clear.
