Eggs Creole

Ingredients

  • 2 tablespoonfuls of butter
  • 4 tablespoonfuls of chopped onions
  • 4 peeled fresh tomatoes
  • 3 finely chopped green peppers
  • 1 level teaspoonful of salt

Instructions

Put butter and onions into a saucepan, cook until the onion is soft, but not brown. Then add tomatoes that have been cut into pieces, and green peppers. Cook this fifteen minutes, and add salt. Have the eggs hard-boiled, and cut into slices. Put them into a baking dish, pour over the sauce, re-heat in the oven, and serve with a dish of boiled rice.
