Cheese Soufflé

Ingredients

  • 1 cup of stale bread crumbs
  • 1 gill of milk
  • 3 eggs
  • 6 tablespoonfuls of grated cheese
  • 1/2 teaspoonful of salt
  • dash of red pepper

Instructions

Put bread crumbs with milk over the fire for just a moment; take from the fire, add the yolks of the eggs, grated cheese, salt and red pepper; stir in the well-beaten whites of the eggs; put into individual baking dishes; bake in a quick oven about eight minutes and send at once to the table.
