Sauce for Hashes or Fish, and good with any thing and every thing

Ingredients

  • 2 or more spoonfuls of good cullis
  • 1 glass of white wine
  • 1 shalot
  • 1 small onion
  • mushrooms
  • truffles
  • morels
  • a bunch of sweet-herbs
  • grated lemon-peel
  • 1 slice of ham
  • yolk of 1 egg
  • bit of butter rolled in flour

Instructions

Take the cullis according to the quantity you intend to make, the white wine, shalot, onion, a few mushrooms, truffles, morels, and the sweet-herbs, with a little grated lemon-peel, the ham, and yolk. Thicken it with a bit of butter rolled in flour, and let it stew till the ingredients are quite soft.
