Sauce for Ducks


  • giblets
  • small piece of lean bacon
  • a little sprig of lemon-thyme
  • some parsley
  • 3 or 4 sage leaves
  • 1 small onion quartered
  • a few peppercorns
  • lemon-peel
  • 1 large spoonful of port wine
  • cayenne pepper
  • butter
  • flour


Stew the giblets till the goodness is extracted, with the lean bacon, either dressed or not, the lemon-thyme, parsley, sage leaves, onion, peppercorns, and plenty of lemon-peel. Stew all these well together; strain and put in theport wine, a little cayenne pepper and butter, and flour it to thicken.
