Restorative Jelly


  • 2 pounds of knuckle of veal
  • 1 1/2 pounds of lean beef
  • 4 pints of water
  • 1/2 ounce of fine isinglass, picked small
  • salt
  • mace


Take the knuckle of veal and lean beef; set it over the fire with the water; cover it close, and stew it till reduced to half. While stewing, put in the isinglass, a little salt, and mace. Strain it off clear, and when cold take off every particle of fat. Warm it in hot water, and not in a pan. Take a tea-cupful twice a day.
