Marrow Pudding Another Way


  • 1 pint of cream
  • 2 penny loaves
  • 1/4 pound of fresh butter
  • 1/4 pound of almonds
  • rose-water
  • 3 marrow-bones
  • whites of 5 eggs and 2 yolks
  • mace
  • 1/4 pound of sugar


Boil up the cream, then take it off; slice the penny loaves thin, and put them into the cream, with the butter, stirring it till melted. Then put into it the almonds beaten well and small, with rose-water, the marrow of the marrow-bones, and the whites and yolks. Season it with mace shred small, and sweeten with the sugar. Make up your pudding. The marrow should first be laid in water to take out the blood.
