Lumber Pie


  • neat's tongue
  • 3/4 pound of beef suet
  • 3/4 pound of currants
  • 2 good handfuls of spinach, thyme, and parsley
  • nutmeg
  • mace
  • sugar
  • 1 French roll grated
  • 6 eggs
  • 1 candied orange
  • 2 pieces of citron
  • some sliced lemon
  • marrow
  • preserved cherries
  • barberries
  • 1 or 2 apples
  • butter
  • white wine
  • lemon


Take the best neat's tongue well boiled, the beef suet, currants, spinach, thyme, and parsley, a little nutmeg, and mace; sweeten to your taste. Add the French roll grated and the eggs. Mix these all together, put them into your pie, then lay up the top. Cut into long slices the candied orange, citron, some sliced lemon, add a good deal of marrow, preserved cherries and barberries, the apple cut into eight pieces, and some butter. Put in white wine, lemon, and sugar, and serve up.
