Hessian Soup


  • 7 pints of water
  • 1 pint of split peas
  • 1 pound of lean beef, cut into small slices
  • 3/4 pound of potatoes
  • 3 ounces of ground rice
  • 2 heads of celery
  • 2 onions or leeks
  • pepper
  • salt
  • dried mint


Take the water, split peas, beef, potatoes, ground rice, celery, onions, or leeks. Season with pepper and salt, and dried mint, according to your taste. Let it all boil slowly together till reduced to five pints.
