Essence of Anchovies


  • 2 pounds of anchovies
  • 1 ounce of bay salt
  • 3 pints of spring water
  • 1/2 gill of red port
  • 1/2 gill mushroom ketchup


Put them into a saucepan until the anchovies are all dissolved; let them boil; strain off the liquor with a one hair sieve, and be careful not to cork it until it is quite cold.
