Dandy Sauce, for all sorts of Poultry and Game

Ingredients

  • 1 glass of white wine
  • 1/2 lemon cut in slices
  • a little rasped bread
  • 2 spoonfuls of oil
  • a bunch of parsley and scallions
  • a handful of mushrooms
  • 1 clove of garlic
  • a little tarragon
  • 1 clove
  • 3 spoonfuls of rich cullis
  • 1 thin slice of fine smoked ham

Instructions

Put the white wine into a stewpan, with the lemon, bread, oil, parsley, scallions, mushrooms, garlic, tarragon, clove, cullis, and ham. Let the whole boil together till it is of a fine rich consistency; pass it through the sieve; then give it another turn over the fire, and serve it up hot.
