Cheesecake. No. 6


  • 1 pint of milk
  • 4 eggs well beaten
  • 3 ounces of butter
  • 1/2 pound of sugar
  • peel of a lemon grated
  • 1 spoonful of flour
  • 1/4 pound of currants
  • a little nutmeg
  • 1/2 glass of brandy


Take the milk, eggs, butter, sugar, peel; put all together into a kettle, and set it over a clear fire; keep stirring it till it begins to boil; then mix the flour with as much milk as will just mix it, and put it into the kettle with the rest. When it begins to boil, take it off the fire, and put it into an earthen pan; let it stand till the next morning; then add the currants, nutmeg, and brandy.
