Another Sauce Piquante


  • 1 gill of white wine
  • 1 gill of broth
  • 1 shalot
  • garlic
  • salad herbs
  • bit of butter of the size of a walnut
  • flour
  • salt
  • whole pepper


Simmer the white wine with the broth, and, when it is consumed to half, put in the shalot, a little garlic, and some salad herbs shred very fine; let it boil, and then add the butter, mixed with flour, salt, and whole pepper, thickening the whole over the fire.
