Lemon Chutney

Ingredients

  • 1 pound of lemons
  • 1 pound of sugar
  • 1 teaspoonful of cayenne pepper (or less)
  • 2 tablespoonfuls of minced ginger
  • 2 tablespoonfuls of mustard seed
  • 1 pound of raisins
  • vinegar
  • salt

Instructions

Cut the lemons in twelve bits each, and cook in vinegar and a very little salt until the rinds are perfectly tender. Drain.

Dissolve the sugar in a quart of vinegar; put in the lemons and cook until the mixture becomes thick like jam. Then add the cayenne pepper, ginger, mustard seed, and raisins. Mix all together and boil ten minutes longer.
