Apple Chutney

Ingredients

  • 3 pounds of sliced apples
  • 2 pounds of sugar
  • 1 quart of strong vinegar
  • 1/2 pound of raisins
  • 4 teaspoonfuls of finely-minced garlic
  • 2 tablespoonfuls of thinly-sliced green ginger
  • 1 teaspoonful of red pepper
  • 1 ounce of mustard seed

Instructions

Boil together the apples, sugar, and vinegar. When this begins to get like jam, add the raisins, garlic, green ginger, red pepper, and mustard seed. Let simmer a while, then bottle and expose to the sun. Apricot chutney is delicious made the same way, with the addition of several ounces of apricot pits, blanched and minced.
