Soda Cream


  • 3 pounds of granulated sugar
  • 1 1/2 ounces of tartaric acid
  • 1 quart of hot water
  • whites of 3 eggs


Take sugar and tartaric acid, both dissolved in the hot water. When cold add the well-beaten whites, stirring well. Bottle for use. Put two large spoonfuls of this syrup in a glass of ice-water, and stir in it one-fourth of a teaspoon of bicarbonate of soda. Any flavor can be put in this syrup.
