Pickled Beets

Ingredients

  • 2 pounds of cold, boiled beets
  • 1 teaspoon of salt
  • 1/8 teaspoon of pepper
  • 1 teaspoon of brown sugar
  • 1 teaspoon of caraway seed, if you like
  • 1 pint of vinegar

Instructions

Take beets, slice, place in crock in layers, sprinkle with salt, pepper, brown sugar, caraway seed, if you like, and cover with vinegar.

Cold, hard-boiled eggs may be placed in the vinegar, and sliced over the beets for decorations. The eggs will be red.
