Matzoth Dipped in Eggs, No. 2

Ingredients

  • 6 eggs
  • 1/2 tablespoon of salt
  • 2 tablespoons of goose fat or olive oil
  • 4 matzoth
  • sugar
  • cinnamon
  • a little grated lemon rind

Instructions

Beat eggs very light, add salt. Heat goose fat or olive oil in a spider. Break matzoth into large, equal pieces. Dip each piece in the egg mixture and fry a light brown on both sides. Serve hot, sprinkled with sugar, cinnamon and a little grated lemon rind.
