  • 3 cups of flour
  • 2 scant cups of sour milk
  • 1 teaspoon of salt
  • 3 eggs
  • 1 level teaspoon of soda
  • butter or butter-substitute


Sift flour in a bowl, pour in sour milk, beat very thoroughly, add salt, the well-beaten yolks of the eggs, mix well, then add the stiffly-beaten whites of the eggs and the soda sifted with one teaspoon of flour. Mix well and fry at once in very hot butter or butter-substitute. Baste the grease over them with a spoon until they are nicely browned. Serve with preserves.
