Brown Flour Soup, No. 2


  • 2 tablespoons of fresh butter
  • 4 tablespoons of flour
  • 1 quart water
  • salt and pepper
  • nutmeg
  • 1 pint of milk


Heat butter in a spider, add flour to it and brown to light golden brown, then add water, stirring constantly. Season with salt and pepper and a little nutmeg. Add milk, let boil up once or twice and serve at once.
