Beet Soup, Russian Style (Fleischig)

Ingredients

  • 1 large beet
  • 1/2 pound of onion
  • 1 pound of fat brisket of beef
  • 3/4 cup of sugar
  • citric acid

Instructions

Cut beet and onion in thick pieces and put in kettle with the brisket; cover with water and let cook slowly two hours; add sugar and a little citric acid to make it sweet and sour and let cook another hour; season and serve hot.
