Red Cabbage, stewed


  • cabbage
  • about 1 ounce of butter
  • a little salt
  • a little sugar
  • 1 gill of claret wine
  • 1 gill of broth or water


Blanch the cabbage for about ten minutes and drain it; then put it in a saucepan with the butter and stir for five minutes, when add the salt, sugar, claret wine, and the broth or water. Boil gently till done, and serve.
