Peas with Bacon


  • 4 ounces of bacon cut in dice
  • 1 quart of peas
  • 1/2 pint of broth or water
  • 2 or 3 sprigs of parsley
  • 1/2 spring of thyme
  • 1 piece of bay-leaf
  • 2 or 3 small onions
  • salt
  • pepper


Put the bacon in a stewpan on the fire, and toss and fry it for about five minutes, then add the peas after having blanched them from five to ten minutes, according to how tender they are; stir for two minutes and add the broth or water, also a bunch of seasonings composed of the parsley, thyme, and bay-leaf; stir again and mix, and then add also the onions, salt, and pepper; boil half an hour, remove the seasonings, and serve peas and salt pork. A small sausage may be added for those who like the taste of it.
