Maitre d'Hotel Sauce


  • 2 ounces of butter
  • 1 tablespoonful of chopped parsley
  • juice of 1/2 lemon
  • salt


This sauce is sometimes called butter maitre d'hotel. Mix and knead well together in a bowl, the butter, parsley and juice; salt to taste and use.

Pepper, grated nutmeg, and chopped chives, may be added if liked. Using vinegar instead of lemon-juice makes an inferior sauce.
