Carrots With Sugar


  • about 1 quart of carrots
  • 2 ounces of butter
  • salt
  • pepper
  • pinch of grated nutmeg
  • about 1/2 pint of broth
  • about 1 teaspoonful of flour
  • 1 good tablespoonful of sugar
  • 2 yolks of eggs


Clean and slice the carrots, and blanch them for five minutes, and then drain them. Put the butter in a stewpan, and set it on a good fire, and when melted lay the carrots in with salt, pepper, the nutmeg, and broth; sprinkle in it, while stirring with a wooden spoon, the flour, and boil gently till cooked. Take from the fire, mix the sugar with the yolks, and those again with the rest, and serve.
