Beans Maitre d'hotel


  • 2 ounces of butter
  • 1 quart of beans
  • pinch of grated nutmeg
  • 1/2 pint of milk
  • salt
  • pepper
  • 1 teaspoonful of chopped parsley
  • 2 beaten yolks of eggs


Put the butter in a stewpan, and set it on a good fire; when melted, put in it the beans cooked in water, with the nutmeg, milk, salt, pepper, and parsley; keep stirring continually, boil ten minutes, take from the fire, mix in it the beaten yolks, and serve.
