Another Spanish Soup, or Olla Podrida


  • 2 onions
  • 1 cucumber peeled and seeded
  • a little pimento
  • 2 cloves of garlic
  • 4 sprigs of parsley
  • 4 sprigs of chervil
  • juice of 4 tomatoes
  • 2 or 3 tablespoonfuls of bread-crumbs
  • oil
  • vinegar
  • salt
  • pepper
  • mustard


Chop very fine the onions, cucumber, pimento, garlic, parsley, chervil, and mix the whole in a bowl with the tomato juice, and to which add the bread-crumbs. Then season with oil, vinegar, salt, pepper, mustard, and water to taste, and serve.

The Spanish call it a cool and refreshing soup.
