Semoulina Pudding


  • 1 1/2 pints of milk
  • 2 ounces of butter
  • 3 ounces of sugar
  • 1 1/2 ounces of sweet and 2 or 3 bitter almonds
  • 3 ounces of semoulina or farina


Put the milk on the fire to boil with the butter, sugar, the almonds blanched and chopped very fine, sprinkle into it the semoulina or farina, and boil until quite stiff, stirring constantly. Remove from the fire and turn into a mould that has been wet in cold water. Serve very cold with fruit sauce or cream.
