Rice Croquettes


  • 3/4 cup of milk
  • 1 generous tablespoonful of butter
  • 1 heaping teaspoonful of sugar
  • 1 1/2 cups of boiled rice
  • 1 saltspoonful of powdered cinnamon or nutmeg, if preferred
  • salt
  • 1 beaten egg


Put the milk in a saucepan over the fire, with the butter, sugar, and when it comes to a boil add the rice, cinnamon or nutmeg, if preferred, and salt to taste. Mix well, let it come to a boil and add the egg, remove from the fire, turn into a plate to get cold, form into cylinders and cook in boiling fat.
