Curried Rice Croquettes


  • 3/4 cup of milk
  • butter the size of an egg
  • 1 1/2 large cups of rice that has been boiled in salted water twenty minutes
  • 1 slightly heaping teaspoonful of curry powder
  • few drops of onion juice
  • salt to taste
  • 1 beaten egg


Put the milk in a saucepan with the butter, let it come to a boil, and stir into it the rice. Add the curry powder, onion juice and salt. When it comes to a boil add the egg to it, stir a minute and remove from the fire. Turn it out, let it cool, and then form into cylinders and fry as usual.
