Apple Custard, No. 1

Ingredients

  • good, tart cooking apples
  • 1 generous tablespoonful of butter
  • 7 tablespoonfuls of sugar
  • 4 eggs
  • grated rind of a lemon

Instructions

Grate some good, tart cooking apples, enough to measure one quart. Beat the butter and sugar to a cream, add to this the egg yolks beaten light, then the apples and the grated rind, and lastly the whites of the eggs beaten to a stiff froth. It can be baked in puff paste or without. Serve cold.
