Celery Cheese Toast


  • celery sauce
  • 1 cup grated cheese
  • 1/2 teaspoon table sauce
  • 1 egg yolk
  • 2/3 cup cream
  • toast or crackers


Make celery sauce, adding grated cheese when celery is added. Stir until cheese is melted. Add table sauce, then add egg yolk and cream and cook over hot water 2 minutes, stirring constantly. Serve on toast or crackers.

One egg white beaten stiff may be added just before serving.
