Sauce Signora


  • 2 tablespoons of chopped, lean, raw ham
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1 1/2 cups of Brown Stock
  • 1 cup of Chili Sauce


Cook the ham in the butter until lightly browned, add the flour, salt, and stir until well blended, then add the Brown Stock and Chili Sauce. Heat to boiling point, stirring constantly. Reduce heat and simmer ten minutes. This sauce may be strained or served without straining. Care must be taken that ham is not overcooked.
