Spice Cake
Ingredients
- 3 1/2 tablespoons hardened vegetable fat
- 1/4 cup sugar
- 1 egg
- 1/4 cup corn syrup
- 1/4 cup milk
- 1 cup (plus 1 1/2 tablespoons) flour
- 1 1/4 teaspoons baking powder
- 2 tablespoons chopped citron
- 1/2 cup raisins, cut in half
- 3/4 teaspoon cinnamon
- 1/4 teaspoon clove
- 1/8 teaspoon nutmeg
Instructions
Cream fat; add sugar gradually, syrup, egg well beaten; mix and sift dry ingredients; add alternately with milk to first mixture. Add raisins (which have been rolled in a little of the flour), mixing them through the cake thoroughly.
Bake about 30 minutes in a moderate oven (about 380° F.).
