To make common Curd Cheese Cakes


  • 1 pennyworth of curds
  • cream
  • 4 eggs
  • 6 ounces of clarified butter
  • 1/4 pound of sugar
  • 1/2 pound of currans well wash'd
  • lemon-peel
  • nutmeg
  • 1 spoonful of rose-water or brandy, whether you please
  • salt


Take the curds, mix them with a little cream, beat the eggs, put to them the clarified butter, sugar, currans, and a little lemon-peel shred, a little nutmeg, the rose-water or brandy, and a little salt, mix altogether, and bake them in small petty pans.
