To make an Oatmeal Pudding


  • 3 or 4 large spoonfuls of oatmeal done through a hair-sieve
  • 1 pint of milk
  • 1/2 pound of butter
  • 1 spoonful of rose-water
  • a little lemon-peel shred
  • a little nutmeg or beaten cinnamon
  • a little salt
  • 6 eggs
  • 1/4 pound of sugar or better
  • paste


Take the oatmeal and milk, put it into a pan and let it boil a little whilst it be thick, add to it the butter, rose-water, lemon-peel, nutmeg or cinnamon, and salt; take the eggs, (leave out two of the whites) and put to them the sugar, beat them very well, so mix them all together; put it into your dish with a paste round your dish edge; have a little rose-water, butter and sugar for sauce.
