Hunting Pudding


  • 1 pound of fine flour
  • 1 pound of beef-suet shred fine
  • 3/4 pound of currans well cleaned
  • 1 quartern of raisins stoned and shred
  • 5 eggs
  • a little lemon-peel shred fine
  • 1/2 nutmeg grated
  • 1 jill of cream
  • a little salt
  • about 2 spoonfuls of sugar
  • a little brandy
  • white wine
  • butter


Take the flour, beef-suet, currans, raisins, eggs, lemon-peel, nutmeg, cream, salt, sugar, and brandy, so mix all well together, and tie it up right in your cloth; it will take two hours boiling; you must have a little white wine and butter for your sauce.
