Spanish Tomato Sauce


  • 1 can of tomatoes or 6 large fresh ones
  • 2 minced onions
  • butter
  • 3 sprigs of parsley and thyme
  • 1 teaspoonful of salt
  • 1/2 teaspoonful of pepper
  • 3 cloves
  • 2 allspice
  • 1 small blade of mace
  • a bit of lemon peel
  • 2 lumps of sugar
  • 2 tablespoonfuls of flour


Fry onions brown in a large tablespoonful of butter. Add to the tomatoes with parsley and thyme, salt, and pepper; cloves and allspice, with mace and lemon peel, and sugar. Stew very slowly for two hours, then rub through a sieve, and return to the fire. Add flour, browned with a tablespoonful of butter, and boil up once. It should be smooth and thick. Keep on ice, and it will keep a week. Excellent.
