Parsnip Fritters

Ingredients

  • 3 large parsnips boiled and mashed fine
  • 2 well-beaten eggs
  • 1/2 teaspoonful of salt
  • 1 saltspoonful of pepper
  • 2 tablespoonfuls of milk
  • 1 heaping tablespoonful of flour

Instructions

Drop in spoonfuls, and fry brown in a little hot butter. Oyster-plant fritters are made in the same way.
