Sauce for Vegetables such as Asparagus, etc.

Ingredients

  • yolks of 3 hard-boiled eggs
  • 3 table-spoonfuls of vinegar
  • 1 shalot or small onion minced fine
  • salt
  • Cayenne pepper
  • 3 table-spoonfuls of olive oil

Instructions

Take the yolks; mash them on a plate with the back of a wooden spoon, and mix them with the vinegar, shalot or onion, and a little salt and Cayenne pepper. Add the olive oil, and mix the whole very well.
