Lemon Butter or French Honey


  • 1/2 pound of butter
  • 6 lemons
  • 12 eggs
  • 2 pounds of brown sugar


Take the butter, melt it in an earthen dish and squeeze in the juice of six lemons; beat the eggs with the brown sugar, stir it in with the rind of two lemons grated, mix it all together, and let it boil twenty minutes, when it will be about the consistency of honey; the flavor is agreeable, and it may be eaten on bread, or as a sauce for boiled pudding.
