Cheese Cakes


  • 1 quart of curd, after the whey has been strained off
  • 1/2 pound of fresh butter
  • 1 ounce of pounded blanched almonds
  • whites of 3 eggs
  • 1 tea-cup of currants
  • sugar
  • rose water
  • paste


Take the curd, mix with it the butter, almonds, the whites, currants; season with sugar and rose water to your taste, and bake in plates with paste.
