Yam Pudding


  • 1 pound of roasted yam
  • 1/2 pound of white sugar
  • 1 pint of cream or 1/2 pound of butter
  • 1 tea-spoonful of powdered cinnamon
  • 1 grated nutmeg
  • 1 wine glass of rose water
  • 1 wine glass of wine
  • 6 eggs


Take roasted yam, and rub it through a cullender. Mix with it white sugar, cream or butter, cinnamon, nutmeg, rose water, and wine. Set it away to get cold. Then beat eggs very light. Stir them into the mixture. Put it into a buttered dish and bake it half an hour. Grate sugar over it when cold.

Chestnut pudding, may be made in the above manner.
